I don’t know about you, but I would like to take this opportunity to thank the genius who put chocolate, coconut, and almonds all together. If I could kiss that person, I would totally do it. I mean, there are not many things that are better in this world, that the combination of those three treats.

I decided that I wanted to take the deliciousness that is an Almond Joy candy bar and transform it into a cookie. That is how Almond Joy Crunch Cookies came to be. It has the base of a moist, chocolate chip cookie but takes it to a whole new level with the addition of coconut flakes, coconut extract and almonds. Dipping half of the cookie in melted chocolate takes this recipe over the top!

Almond Joy Crunch Cookies

Trust me when I say that if you like Almond Joy candy bars, then you are going to LOVE these delicious cookies. They are the perfect ratio of chocolate, coconut and almond and are chewy and delicious. The “crunch” part of the cookie comes from the flaked coconut.

The first thing you’ll do is cream the softened butter with both the white and brown sugars until the mixture is light and fluffy. You’ll continue by beating in the eggs, vanilla and coconut extract.

In a separate bowl, sift together the flour, baking soda and salt. Add the dry ingredients to the wet ingredients and mix until combined. Stir in the coconut flakes, chocolate chips and almonds.

Using a cookie scoop, drop the cookie dough onto a parchment lined baking sheet a couple of inches apart. Bake at 375 degrees for 9-11 minutes. Keep an eye on them at the end of the baking time, because they can become over done quickly. Allow the cookies to rest on the cookie sheet for 1-2 minutes before transferring to a cooling rack.

  1. Cream the butter and sugar together until light and fluffy. Beat in the eggs and extracts.
  2. In a separate bowl, combine the flour, baking soda and salt. Add the dry ingredients to the wet ingredients and mix until combined.
  3. Stir in the coconut, chocolate chips and almonds.
  4. Use a cookie scoop to drop the cookie dough onto a parchment lined baking sheet.
  5. Bake at 375 degrees for 9-11 minutes or until lightly browned.
  6. Cool for 1 minute on the baking sheet before removing to a cooling rack.
Recipe Notes

*Optional Chocolate Dip

I dipped half of my cookies in melted chocolate and it was amazing. To dip the cookies you will in chocolate, you will need:

  • 2 cups Chocolate Chips
  • 1 teaspoon Vegetable of Canola Oil

Place the chocolate chips in a microwave-safe bowl and pour the oil over the top. Microwave the chocolate on 50% power in 30 second increments stirring between each until melted. Dip each cooled cookie in chocolate and place on a baking sheet. Place in the refrigerator or freezer until set.
